Sweet potatoes with tahini butter

Soft, nutty, salty-sweet, weirdly elegant

Steamed sweet potatoes get split and drenched with tahini butter made with lime, soy, sesame oil, and garlic, then finished with toasted sesame seeds.

Sweet potatoes with tahini butter and toasted sesame seeds

Ingredients

  • 2 1/2 pounds sweet potatoes, about 4 medium
  • 6 tablespoons unsalted butter, room temperature
  • 1/4 cup tahini
  • 2 to 3 tablespoons fresh lime juice, plus wedges for serving
  • 2 tablespoons soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 clove garlic, finely grated
  • Salt and black pepper
  • Toasted sesame seeds, for topping

Instructions

  1. Steam the potatoes. Steam the sweet potatoes until completely tender, about 35 to 40 minutes.
  2. Make the tahini butter. Whisk together the butter, tahini, lime juice, soy sauce, sesame oil, and garlic until smooth. Season with salt, pepper, and more lime juice if needed.
  3. Toast the sesame seeds. Toast them in a dry pan until deep golden.
  4. Serve. Split the warm potatoes lengthwise, season with flaky salt, spread generously with tahini butter, and top with sesame seeds. Serve with lime wedges.
