Sweet potatoes with tahini butter
Soft, nutty, salty-sweet, weirdly elegant

Steamed sweet potatoes get split and drenched with tahini butter made with lime, soy, sesame oil, and garlic, then finished with toasted sesame seeds.

Ingredients
- 2 1/2 pounds sweet potatoes, about 4 medium
- 6 tablespoons unsalted butter, room temperature
- 1/4 cup tahini
- 2 to 3 tablespoons fresh lime juice, plus wedges for serving
- 2 tablespoons soy sauce
- 1 teaspoon toasted sesame oil
- 1 clove garlic, finely grated
- Salt and black pepper
- Toasted sesame seeds, for topping
Instructions
- Steam the potatoes. Steam the sweet potatoes until completely tender, about 35 to 40 minutes.
- Make the tahini butter. Whisk together the butter, tahini, lime juice, soy sauce, sesame oil, and garlic until smooth. Season with salt, pepper, and more lime juice if needed.
- Toast the sesame seeds. Toast them in a dry pan until deep golden.
- Serve. Split the warm potatoes lengthwise, season with flaky salt, spread generously with tahini butter, and top with sesame seeds. Serve with lime wedges.
