Sticky toffee & spiced pear oatmeal

Warm, soft, and a little bit treacly in the nicest way

Chopped pears and Medjool dates simmer down with cinnamon, ginger, and the tiniest dash of cloves before oats join the pot for a cozy, sticky-sweet breakfast.

Ingredients

Serves 2

  • 2 medium pears, chopped
  • 4 Medjool dates, roughly chopped
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • Tiniest dash of cloves
  • 1 1/3 cups old-fashioned oats
  • 2 1/3 cups water, plus 1 cup for softening the fruit

Instructions

  1. Soften the fruit. In a medium saucepan, add the dates, pears, and 1 cup of water. Bring to a boil, reduce the heat to medium-high, cover, and cook for 5 minutes until softened.
  2. Spice and simmer. Stir in the cinnamon, ginger, and cloves. Add the oats and 2 1/3 cups water, bring back to a boil, then reduce the heat to medium. Cook for 4 to 5 minutes, stirring frequently, until the oats are soft and the texture is just how you like it.
  3. Serve warm. Remove from the heat and spoon into bowls while it is still cozy.

This one sounds especially lovely with an extra pinch of cinnamon on top.
