Lemon Fluff
Chilly, citrusy, cloud-soft dessert bars

An old-school lemon Jell-O dessert with whipped evaporated milk and vanilla wafer crumbs. Very potluck, very fridge-cold, very sweet little sunshine square energy.
Ingredients
- 1 can evaporated milk
- 1 small package lemon Jell-O
- 1 3/4 cups hot water
- 1/4 cup lemon juice
- 1 cup sugar
- 2 1/2 cups vanilla wafer crumbs
Instructions
- Chill the milk. Refrigerate the evaporated milk for 3 to 4 hours until very cold.
- Dissolve the gelatin. In a bowl, dissolve the lemon Jell-O in the hot water.
- Partially set it. Chill the gelatin mixture until it is partially set.
- Whip the gelatin. Beat the chilled gelatin mixture until light and fluffy.
- Add the lemon and sugar. Mix in the lemon juice and sugar.
- Whip the milk. Beat the chilled evaporated milk separately, then fold it into the lemon gelatin mixture.
- Layer the pan. Line the bottom of a 9x12-inch pan with vanilla wafer crumbs.
- Fill and finish. Pour in the lemon fluff mixture, then sprinkle the remaining crumbs over the top.
- Chill. Refrigerate until fully set, then scoop or cut and enjoy.
