Lemon Fluff

Chilly, citrusy, cloud-soft dessert bars

An old-school lemon Jell-O dessert with whipped evaporated milk and vanilla wafer crumbs. Very potluck, very fridge-cold, very sweet little sunshine square energy.

Ingredients

  • 1 can evaporated milk
  • 1 small package lemon Jell-O
  • 1 3/4 cups hot water
  • 1/4 cup lemon juice
  • 1 cup sugar
  • 2 1/2 cups vanilla wafer crumbs

Instructions

  1. Chill the milk. Refrigerate the evaporated milk for 3 to 4 hours until very cold.
  2. Dissolve the gelatin. In a bowl, dissolve the lemon Jell-O in the hot water.
  3. Partially set it. Chill the gelatin mixture until it is partially set.
  4. Whip the gelatin. Beat the chilled gelatin mixture until light and fluffy.
  5. Add the lemon and sugar. Mix in the lemon juice and sugar.
  6. Whip the milk. Beat the chilled evaporated milk separately, then fold it into the lemon gelatin mixture.
  7. Layer the pan. Line the bottom of a 9x12-inch pan with vanilla wafer crumbs.
  8. Fill and finish. Pour in the lemon fluff mixture, then sprinkle the remaining crumbs over the top.
  9. Chill. Refrigerate until fully set, then scoop or cut and enjoy.
