Earl Grey hot chocolate chia pudding
Tea-time pudding with cozy café dessert energy

Warm milk gets infused with Earl Grey, then whisked with cocoa, Greek yogurt, chia seeds, maple syrup, and vanilla for a rich make-ahead breakfast pudding.
Ingredients
Makes 4 servings
- 1 cup milk of choice
- 3 Earl Grey tea bags
- 1/4 cup cocoa powder
- 1 cup Greek yogurt
- 1/2 cup chia seeds
- 1/4 cup maple syrup
- 1/2 teaspoon vanilla
Instructions
- Infuse the milk. In a small saucepan, bring the milk to a low boil. Remove from the heat, add the tea bags, and let steep for 5 minutes. Press down on the tea bags to release more flavor, then remove and discard them.
- Mix the pudding base. Sift the cocoa powder into a medium bowl to break up any lumps. Add the Earl Grey milk and Greek yogurt, then whisk until smooth. Stir in the chia seeds, maple syrup, and vanilla until evenly combined.
- Chill. Transfer to the fridge. After 20 minutes, give it a really good stir to prevent clumping. Let it chill overnight, or for at least 4 to 6 hours.
Do not skip the 20-minute stir. That is the difference between silky and chia-boulder situation.
