This quick copycat of Dolly Parton’s Stampede soup is a creamy vegetable soup made with a simple butter-and-flour base, chicken broth, mixed vegetables, and half-and-half, with the texture mashed or blended to exactly where you want it.
Ingredients
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 to 3/4 teaspoon salt
- 1/2 to 1 teaspoon ground white pepper
- 1 can chicken broth, 14.5 ounces
- 1 can mixed vegetables, 15 ounces, drained
- 2 cups half-and-half
Instructions
- Make the roux base. Melt the butter in a large saucepan. Stir in the flour, garlic powder, onion powder, white pepper, and salt, then let it bubble gently for 1 minute.
- Add broth and vegetables. Whisk in the chicken broth and the drained mixed vegetables. Bring to a simmer and cook for 5 minutes.
- Mash or blend. Use a potato masher, immersion blender, or standard blender to break down the vegetables to your preferred texture.
- Finish with creaminess. Whisk in the half-and-half and simmer for 5 more minutes.
- Serve. Taste and adjust the seasoning, then serve hot with biscuits, cornbread, or whatever cozy bread situation you have nearby.
Shortcut note: canned mixed vegetables are the fast path here, but fresh steamed vegetables work too if you want a slightly brighter bowl.
