Cherry clafoutis
Soft custard, juicy cherries, powdered sugar snow

A very simple French-ish bake: butter the dish, scatter in cherries, whisk up a lightly boozy custard batter, and bake until just set.
Ingredients
- 350 grams pitted cherries
- 3 eggs
- 240 grams milk
- 50 grams cream
- 90 grams sugar
- 60 grams flour
- Pinch of salt
- 1 teaspoon vanilla extract or vanilla bean
- Dash of almond extract
- A splash of rum
- Butter for the baking dish
- Icing sugar for dusting
Instructions
- Prep the dish. Generously butter a baking dish and scatter the pitted cherries across the bottom.
- Make the batter. Whisk together the eggs, milk, cream, sugar, flour, salt, vanilla, almond extract, and rum. Pour it through a sieve so it stays smooth.
- Fill and bake. Pour the batter over the cherries and bake in a preheated 375°F oven for 45 to 50 minutes, until it still jiggles just a little but a knife inserted comes out clean.
- Cool and finish. Let it cool, then dust with icing sugar before serving.
