Cherry clafoutis

Soft custard, juicy cherries, powdered sugar snow

A very simple French-ish bake: butter the dish, scatter in cherries, whisk up a lightly boozy custard batter, and bake until just set.

Ingredients

  • 350 grams pitted cherries
  • 3 eggs
  • 240 grams milk
  • 50 grams cream
  • 90 grams sugar
  • 60 grams flour
  • Pinch of salt
  • 1 teaspoon vanilla extract or vanilla bean
  • Dash of almond extract
  • A splash of rum
  • Butter for the baking dish
  • Icing sugar for dusting

Instructions

  1. Prep the dish. Generously butter a baking dish and scatter the pitted cherries across the bottom.
  2. Make the batter. Whisk together the eggs, milk, cream, sugar, flour, salt, vanilla, almond extract, and rum. Pour it through a sieve so it stays smooth.
  3. Fill and bake. Pour the batter over the cherries and bake in a preheated 375°F oven for 45 to 50 minutes, until it still jiggles just a little but a knife inserted comes out clean.
  4. Cool and finish. Let it cool, then dust with icing sugar before serving.
