Charcuterie rotisserie chicken dense bean salad

A fridge-clearout feast with major snack-board energy

White beans, butter beans, rotisserie chicken, charcuterie, cheddar, parmesan, tomatoes, olives, and herbs get tossed in a glossy honey-mustard vinaigrette.

Ingredients

  • 1 can white beans
  • 1 can butter beans
  • 1 rotisserie chicken, broken down and diced
  • 1/2 pound charcuterie meat, such as salami or coppa
  • 1/4 pound parmesan cheese
  • 1/4 pound cheddar cheese
  • 1 pint cherry tomatoes
  • 1/2 bunch Italian parsley
  • 1 shallot, minced
  • 1 cup pitted olives

For the vinaigrette

  • 1/2 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon whole grain mustard
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sea salt
  • 2 tablespoons honey
  • 1 clove garlic, grated

Instructions

  1. Start the bowl. Rinse and drain the beans, then add them to a large salad bowl.
  2. Add the proteins. Dice the rotisserie chicken and charcuterie meat into bite-size pieces and add them in.
  3. Add the cheese and vegetables. Dice the parmesan and cheddar. Halve the tomatoes, mince the parsley and shallot, chop the olives, and add everything to the bowl.
  4. Mix the vinaigrette. Combine the olive oil, red wine vinegar, both mustards, sea salt, honey, and garlic. Blend, froth, or shake until fully emulsified.
  5. Toss and serve. Pour the dressing over the salad, toss thoroughly, and serve. The original note suggests eating it with crackers, which sounds extremely correct.
