⏱️ Time estimate: about 55 minutes

Apricot glazed chicken thighs

Ingredients

  • 6 boneless, skinless chicken thighs
  • Coarse salt and freshly ground black pepper
  • 1 (13-ounce) jar apricot jam
  • 1 tablespoon honey
  • 1 tablespoon hot mustard
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced

Instructions

  1. Heat the oven. Heat to 425°F. Pat the chicken dry, arrange it in a baking dish, and season generously with salt and pepper.
  2. Make the glaze. Bring the jam, honey, mustard, soy sauce, and garlic to a boil in a small saucepan over medium heat. Lower the heat and simmer about 10 minutes, until reduced by half and thickened.
  3. Roast. Spoon the glaze over the chicken. Roast 40 to 45 minutes, basting with pan sauce every 10 minutes, until cooked through and the juices run clear.
  4. Serve. Spoon over extra sauce and serve with rice and roasted carrots, if you like.

A little sriracha at the table is especially nice if you would like more heat.
