Air-fryer Brussels sprouts with garlic, balsamic and soy

Crispy sprouts with a glossy tangy-savory finish

Brussels sprouts get crisped in the air fryer, finished with sliced garlic, and drizzled with a reduced balsamic dressing sharpened with lime and soy.

Air-fryer Brussels sprouts with balsamic glaze

Ingredients

  • 1 pound Brussels sprouts
  • 3 tablespoons extra-virgin olive oil, divided
  • 1/4 teaspoon kosher salt
  • 2 garlic cloves, thinly sliced
  • 1/4 cup balsamic vinegar
  • 1 teaspoon fresh lime juice, plus more for serving
  • 1/2 teaspoon soy sauce

Instructions

  1. Prep the sprouts. Trim the Brussels sprouts and cut them in half through the stems, or quarter any especially large ones. Heat the air fryer to 400°F if yours needs preheating.
  2. Air-fry the first round. Toss the sprouts with 1 tablespoon olive oil and the salt. Air-fry for 15 minutes, shaking the basket or stirring halfway through.
  3. Add the garlic. Sprinkle in the sliced garlic and continue air-frying until the garlic is golden and the sprouts are crisp-edged, another 2 to 4 minutes.
  4. Make the dressing. Meanwhile, simmer the balsamic vinegar in a small saucepan until thickened and slightly syrupy, 2 to 3 minutes. Remove from the heat and whisk in the remaining 2 tablespoons olive oil, the lime juice, and soy sauce.
  5. Finish and serve. Transfer the sprouts to a platter, drizzle with the dressing, and add another squeeze of lime juice to taste.

Keep a very close eye on the balsamic, because it crosses from luscious to burned little goblin syrup with surprising speed.
