Air-fryer Brussels sprouts with garlic, balsamic and soy
Crispy sprouts with a glossy tangy-savory finish
⏱️ Time estimate: about 25 minutes
Brussels sprouts get crisped in the air fryer, finished with sliced garlic, and drizzled with a reduced balsamic dressing sharpened with lime and soy.
Ingredients
- 1 pound Brussels sprouts
- 3 tablespoons extra-virgin olive oil, divided
- 1/4 teaspoon kosher salt
- 2 garlic cloves, thinly sliced
- 1/4 cup balsamic vinegar
- 1 teaspoon fresh lime juice, plus more for serving
- 1/2 teaspoon soy sauce
Instructions
- Prep the sprouts. Trim the Brussels sprouts and cut them in half through the stems, or quarter any especially large ones. Heat the air fryer to 400°F if yours needs preheating.
- Air-fry the first round. Toss the sprouts with 1 tablespoon olive oil and the salt. Air-fry for 15 minutes, shaking the basket or stirring halfway through.
- Add the garlic. Sprinkle in the sliced garlic and continue air-frying until the garlic is golden and the sprouts are crisp-edged, another 2 to 4 minutes.
- Make the dressing. Meanwhile, simmer the balsamic vinegar in a small saucepan until thickened and slightly syrupy, 2 to 3 minutes. Remove from the heat and whisk in the remaining 2 tablespoons olive oil, the lime juice, and soy sauce.
- Finish and serve. Transfer the sprouts to a platter, drizzle with the dressing, and add another squeeze of lime juice to taste.
Keep a very close eye on the balsamic, because it crosses from luscious to burned little goblin syrup with surprising speed.
